Şirden Rennet at Home 100 ml ℮

1-) Heat 5LT raw milk to 75°C, wait 1-2 minutes and quickly cool it to 35°C.

2-) Add 1 teaspoon of rennet to half a tea glass of drinking water, stir and slowly add it to the milk to ensure that it is thoroughly dispersed.

3-) Cover the pot and wrap it well so that it does not lose its heat. Wait 30-40 minutes until a firm and elastic clot forms.

4-) With the help of a knife, cut the resulting clot lengthwise and deeply into 1 cm pieces. Wait 30-40 minutes for the water to separate.

5-) In order for the water of the curd to separate faster, warm the curd to 35-37°C by stirring slowly.

6-) Place the well-drained curd in a filtering cloth and tie it tightly.

7-) Put approximately 1.5-2 kg weight on it. Apply pressure for 4-5 hours, turning the cheese over every 2 hours. (If it is kept longer, a harder cheese will be obtained.)

8-) After the water of your cheese is removed, put it in a suitable container, add the brine and let it rest for 1 hour. The brine should completely cover the surface of the cheese.

Brine Preparation : Add 2 tablespoons of table grinding salt to 1 liter of water, boil it and cool it to 25°C. The amount of salt in the brine determines how salty your cheese will be. The recommended amount is 1LT brine per 500g ℮ cheese. Always keep your cheese in brine

9-) Keep your cheese in the refrigerator. You can reduce the salt by rinsing as much cheese as you need in hot water. Enjoy your meal.
